Chicken and Gnocchi Soup Recipe

Do you need some soup to warm up a cold winter day? My Chicken and Gnocchi Soup Recipe is one of our family favorites. I first had this kind of soup at the Olive Garden and knew that I had to come up with my own version to make at home.

Here's the recipe it is yummy and sure to please!


4 tablespoons butter
1 cup onion, diced
3/4 cup celery, diced
1 cup carrots, shredded
2 cloves garlic, minced
4 tablespoons flour
3 chicken breasts, cooked and diced or shredded
4 cups chicken broth
2 cups half-and-half cream
1 16 oz package of gnocchi, cooked according to the package directions.
1-2 cups chopped spinach
Ground nutmeg
Ground black pepper

For this soup, I always begin by cooking up my chicken. My favorite method for tender, flavorful chicken breasts is to cut them in half and pound to an even thickness. Then, I place the chicken breasts in a large skillet with heated olive oil and add salt and pepper. I cover the pan and cook chicken at medium heat on each side for 6-8 minutes until the meat is done. Cube or shred the meat once it is cooked.

While the chicken is cooking add your onion, celery, carrots, garlic and butter to a large skillet. Saute over medium heat until the veggies are tender. 6-10 minutes depending on how small you chop your veggies.

Once the veggies are cooked, add the flour to the mixture. Stir it in and cook for 1 minute to cook the flour.

Add the chicken broth and cooked chicken to the pan with your veggies. Cook over medium heat until the broth is almost to a boil. Now is a good time to boil your gnocchi, in a separate pan according to the package directions.

Add the cream and prepared gnocchi to the broth mixtures and continue to cook over medium heat to warm the cream. Do not bring to boil.

Once everything is warm, add the chopped spinach and sprinkle in a pinch or ground nutmeg and pepper. Cook for one minute more.

Now your delicious soup is ready to serve with a delicious salad or warm Amazing Crusty Bread.
